This is a quite-well-designed probe thermometer made primarily for cooking meat and poultry. It shows the temperature at and near the tip of the probe that's currently in use. When you poke the probe well into the meat or bird, you can see the inside temperature as it cooks; when it's hot enough, it's ready to eat.

As the food heats, dark LCD circles progressively surround colored dots to show progress. When ready, a beeper lots you know; it can be switched off.

It has a wide variety of meats and poultry for which you can set it (no bison or venison!). Following best advice, for some varieties, you can't set it for rare or medium, because they are just not safe.

I didn't buy it for cooking meat or poultry, though; I wanted to use it as a general-purpose thermometer, and it works just fine for that, although it's cold end isn't rated for a freezer. This probe thermometer is exactly what I was looking for when I was shopping for a meat thermometer. I've owned it for about a year and with use once every two to three weeks, I haven't had to replace the batteries yet.

The attached probe folds out and is easy to pierce into meat. The probe gives a reading fairly quickly, stabilizing after about 5 seconds. Reading the thermometer is fairly intuitive and simple. You can tap the "meat" button to choose the type of meat you are cooking and the "taste" button to choose your target 'doneness'. The taste temperatures are the same throughout, varying only in restricting certain meats to well-done for safety reasons. As the temperature rises, circles fill in around the colored dots to show the progress. The current temperature is displayed in easy to read large numbers with the target temperature displayed in smaller numbers to the right.

I have used this in the past to test if my bread is done. The problem with it is the time it takes to register the final temperature. I would estimate that it takes about 25-30 seconds to register the final temperature, and you're still not sure if this is it b/c it could keep climbing. I still find it useful (hence the three stars), but I wish it was more instant. I have never used the wire probe included but this could prove to be a valuable part of this item. I bought this based on the review in Fine Cooking.
